Pick one or combine: Cucumber, Cabbage, Onion
1/2 cup Rice Vinegar (or other vinegar of your liking)
1/2 cup Water at room temperature or cooler
1 1/2 tsp Salt
1 1/2 tbsp Sugar or Maple Syrup
2 tsp Sesame Oil
Chili flakes (optional)
Other spices (optional, get creative!)
Slice your cucumbers (cabbage or onion) as desired.
Whisk together the brine made of water, vinegar and seasonings.
Pack the cucumbers into a jar, add some dill or garlic (optional), and pour the brine over it all.
Refrigerate until the pickles taste sufficiently “pickled!” (approx. 5 days)
